Chicken Pockets
This is something I just came up with out of the blue – It came out SO fantastic that its quite a common dish at my place now. Basically, I stuffed some fine chicken breast slices with some of my fav condiments, sealed them into pockets (with toothpicks) & baked them!
Ingredients:
3 fine slices of chicken breast
3 tbsp of fresh chopped avocado
3 tbsp of finely chopped olives
3 tbsp cream-cheese
salt to taste
1/4 tsp red-chili pwd
1/4 tsp pepper pwd
a pinch of garlic-ginger paste
2-3 tbsp oil
1/4 tsp turmeric pwd
Cooking Instructions:
Wash the chicken slices & pat dry with paper towels.
Rub them with salt, garlic-ginger paste and all the powder spices & set aside for 10 mins.
Mix the cheese, avocado & olives together to a coarse paste.
Spoon the paste equally onto each slice.
Fold the slices into halves & seal them with 2-3 toothpicks (like tacking in stitching).
Rub some oil all over each ‘pocket’.
Either shallow fry them on each side for 5mins or Bake them at 350deg for 20mins, and then broil them for another 5.
Take the toothpicks out before serving! Enjoy
