Veggie Omelette

A quick-n-easy, super-nutritious tangy b’fast or evening snack made of gramflour, mixed vegs & tomato paste.

 

 

 

PrepTime 5mins – Serves 2-3 – CookTime 12mins

 

Ingredients:

1 cup tomato paste
1 cup gram flour (besan)
1-2 chopped green chillies
1 small onion – finely minced

½ cup mixed cooked vegs – peas, carrots, capsicum – minced (optional)
1 tbsp chopped coriander
1/2 cup grated cheese

2 tbsp milk
1/4 tsp turmeric powder
salt and pepper to taste
1/2 tsp chilly powder
2 tbsp sugar
1 tbsp ghee
some oil

Cooking Instructions:

Mix all the ingds together except the ghee & cheese. Add some water to make a smooth paste. Heat a a thick-bottom non-stick pan & heat ghee on it. Pour a ladleful of batter onto the pan & spread evenly with the back of the ladle – to form a round omelette or pancake. Pour 1-2 tsp of oil all around the edge of the omelette and allow to cook till its golden brown in color. Turn over and cook the other side too. Sprinkle some cheese, fold or roll the omelette. Garnish with chopped coriander & serve hot immediately with a sauce, pickle or chutney of your choice.

Alternatively, grease a round pan with oil, pour in the batter mixed with 2 tbsp of oil into it and bake at 375F for 20 minutes or until done. Remove from oven, sprinkle the cheese and grill on the top shelf until the cheese melts. Cut into wedges and serve, with your choice of sauce, pickles or chutney.
