Strawberry Rice-pudding

Sweets for my sweet.. Sugar for my honey!! Yeah baby, this ones perfect for Valentine’s day, complete with romantic-rose & seductive-strawberry notes…Mmmm!!



PrepTime 30mins – Serves 2 – CookTime 15mins

4 tbsp rice
a handful of nuts (cashews, almonds &/or pistachios)
5 cups full cream milk
3/4 cups sugar
1/2 tsp cardamom pwd
1/4 tsp nutmeg pwd (optional)
12-15 ripe fresh strawberries
a cup of whipping cream
3-4 drops rose essence
pink/red food color
a handful of rose petals (optional)
2 tbsp butter (optional)

Cooking Instructions

1. Wash & soak the rice for 30mins & soak the nuts in hot water till you can peel them.
2. Finely slice the nuts & leave them in the warm water.
3. Keep 2-4 strawberries for the garnish & finely chop the rest (w/o the stem,of course)
4. Drain the rice & grind it with half cup water to a coarse paste.
5. Bring the milk to a boil along with the butter
6. Gradually stir in the rice paste, reduce heat & simmer for 3-4mins, stirring constantly till the milk thickens.
7. Add  the sugar, cardamom (& cinnamon), rose essence & 1/2 the nuts – cook till sugar dissolves.
8. After cooling it to room temp, add the chopped berries & few drops of the color & stir till it turns light pink
9. Transfer to any serving dish, earthenware, individual bowls or dessert glasses.
9. Pipe on some cream, place full/halved strawberries elegantly on it (or along the glass edge like lemon slices on a drink!) & sprinkle with the remaining nuts & the rose petals. Serve chilled!

Note: If you don’t have strawberries, use strawberry jam preferably with fine pieces of berries
