Shefale’s Tiramisu

I’ve always wanted to know how Tiramisu is made! My friend, Shef-the-Chef showed me how…

PrepTime 20mins – Serves 8-10 – CookTime 30mins



8 eggs
1 lb. Mascarpone cheese
2 tbsp Espresso ground coffee powder
1/3rd cup Tia Maria
2-3 packs Lady Fingers (NOT the vegetables! Chk out pics in the Gallery)
4-6 tbsp cocoa pwd
1 cup sugar
Dark chocolate slab for deco.

Cooking Instructions
1. Blend the egg-whites with the sugar.
2. Blend the mascarpone into the yolks.
3. Brew 1.5 cups espresso & set to cool.
4. When cool, add 1/3rd cup Tia Maria to the espresso.
5. Beat the egg whites to stiff peaks (such that when you over-turn the bowl, it doesn’t fall off or even move!)
6. Fold the white peaks into the yolk mix, lightly.
7. Drench one lady finger at a time in the espresso, enough to make the base layer in a large bowl.
8. Spread some of the egg mix on it to form the 2nd layer
9. Top it off with cocoa powder dusted over it.
10. Repeat steps 7 – 9 above to end with dusted cocoa pwd on top.
11. Shave some dark chocolate on the top as a garnish.
12. Chill for 15 mins or until dessert time.

I must say, this was THE BEST DESSERT I HAD IN 2009! Thanks, Shef; Loadsa love comin ur way…
