Orzo-n-Chicken Frittata

Orzo is rice-like pasta; Frittata is a baked omelette which rises like a moist creamy spongy cake of veggies & meat – more ‘brunch’ than b’fast!

 

 

PrepTime 8mins – Serves 3-4 – CookTime 30mins

 

 

Ingredients:
3/4 cup orzo
2 cups chicken stock/broth
6 eggs
1/3 cup ricotta cheese
1/4 cup sour cream
1 cup chopped scallions for a mild onion flavor (else use any onions)
1/4 cup chopped parsely
1/4 cup chopped roasted red peppers/capsicum
salt & pepper to taste
2 cups chopped cooked chicken breast (or sausage, roast meat, etc) or any vegs of your choice.

Cooking Instructions
:

1.Add orzo to boiling stock (No stock?? Use plain water & salt) Cook for 8min. Drain & leave to cool.
2. Beat the eggs & add the remaining ingredients, inclu the cooled orzo – mix well.
3. Pour the mixture into baking dish & bake at 375 deg for 25 mins. Then, broil for 5 mins to brown the top.

Recipe in a sentence: Mix together 6 beaten eggs, 2 cups cooked & cooled orzo, 1/3 cup ricotta, 1/4 cup sour cream, 1/4 cup chopped scallions, 1/4 cyp chopped parsely, 1/4 cup roasted red bellpeppers, 2 cups shredded cooked meat/sausage & some salt-n-pepper, bake at 375 deg for 25 mins & broil for 5 mins.

Left-over make-over tip: Use some leftover cooked meat/prawns/fish/chicken (bonelessmeats ofcourse) & some leftover cooked rice.

    I think this is an excellent recipe to use up my leftovers. I had some fried rice leftovers from the weekend & half-used packc of sausages & grated cheese – just put in whatever I had actually! Lol…
