Mixed Seafood Balls – Cajun style

This recipe has been inspired by something I had at Bubba Gump – soft moist mixed-seafood & corn balls, with a Cajun twist, served with tartar sauce.
 

 

PrepTime 10mins – Serves 6 – CookTime 15mins

 

 

 

Ingredients:
p.MsoNormal, li.MsoNormal, div.MsoNormal { margin: 0in 0in 0.0001pt; font-size: 12pt; font-family: “Times New Roman”,”serif”; }span.bodytext { }.MsoChpDefault { font-size: 10pt; }div.Section1 { page: Section1; }1/2 lb. cleaned & peeled shrimp
1 can crabmeat (drained)
1 can salmon/tuna (drained)
1 can corn kernels (drained)
1 cup cooked rice
1 tbsp Cajun spice mix
1/2 cup tartar sauce (bottled/ready)
1 tbsp ground mustard
2 tbsp dried parsley
Salt to taste
Freshly ground black pepper
2 eggs
1/4 cup dried bread crumbs mixed with 1 tbsp cajun spice mix
Oil for deep frying
Lemon wedges & tartar sauce for serving
Cooking Instructions:
Coarsely grind the shrimps & mix the crabmeat, fish, cajun seasoning, mustard, tartar sauce, bread crumbs, pepper, salt, cooked rice, 1 egg & corn kernels – Mix well & make golf-ball size fish balls. Beat the remaining 1 egg & roll the balls 1-by-1 into the egg & dust with bread-crumbs. Deep fry till golden brown in heated oil. Drain on paper towels & serve with lemon wedges n tartar sauce.

    I have been to Gump many times and we always order these seafood balls there – I noticed the corn inside but I’ve never tried it at home. I’m a FAN.. YAYYYYYY for this recipe!!!!!!
