Sumedha’s Daal-Makhni

I’ve had lunch at Sumedha’s once & I must say, her daal-makhni was simply¬† out-of-this-world; Seems like I can taste it just as I think of it!
 

 

SoakTime 6-8hrs – Serves 3-4 – CookTime 25mins

 

 

Ingredients:
1 cup Whole urad dal
1/3rd cup kidney beans (rajma
a tiny cinnamon stick
2-3 cloves
2-3 garlic cloves
2-4 spoons of oil
1/2 tsp cumin seeds
a pinch of hing
1/2 inch ginger – finely chopped
1 dried red chilly
1 small finely chopped onions
2 finely chopped tomatoes (paste preffered)
salt to taste
1/2 tsp sugar
1/2 tsp cumin powder.
1 tbsp Dal-Makkani masala (I prefer MDH spices, any mild garam masala will also taste the same).
1 tbsp lemon juice
1 cup cubed paneer soaked in room-temp water to which a pinch of turmeric/haldi is added.
1/4 cup butter
1/4 cup sour cream (or plain cooking cream & then add salt to taste)

Cooking Instructions:

1. Soak the urad dal & kidney beans (rajma) for about 6-8 hours (about 3 :1 proportion).
2. Steam this above soaked dal+rajma in pressure cooker in a slow heat for about 20-30 mins, along with the cinamon stick, cloves & garlic. Do not add salt now.
3. In a pan, heat the oil, add cumin seeds & hing. Then add ginger, dried red chilly & fry till a bit brown. Then add onions & fry till brown.
4. Add the tomatoes (paste preffered), salt & sugar. Stir & cook.
5. Add cumin pwd & Dal-Makhni/ Garam masala. Keep stirring & fryn the masalas well till the oil separates.
6. Add lemon juice.
7. Once the tomatoes are cooked, add paneer.
8. Add the boiled daal to this paste. Let it boil & add salt if required.
9. Add butter and (sour) cream. I usually add a little butter and milk for the creamy taste.

Garnish with some grated paneer, chopped coriander leaves &/or a drizzle of beaten cream. Serve hot with naans/ rotis/ parathas.

    Hi. I am a huge fan of Indian dhaals & would like to know how to make simple daal (yellow) as well. I love all dhaals & this black one is TOP of my list! Thanks!!! I’m gonna make it for some friends soon & will buy some naan-breads too – make it Indian night!
