Vishu Rice (Coconut rice w/ Jaggery curry)

My simple version of a festive rice dish that South Indians make on their New-Years day, Vishu – 14th April. Like me, you might not like sweet rice dishes, but this is a definite ‘must-try’!



PrepTime 5mins – Serves 2 – CookTime 15mins


For the rice:
1 glass of white rice
1/2 glass full-cream coconut milk
1.5 glasses water
1/2 cup dessicated coconut
salt & sugar to taste
1/2 tsp cardamom pwd
1/4 tsp cumin pwd

For the sauce/ curry:
A handfull of jaggery
1.5 glasses coconut milk
1 tsp cumin pwd
1/2 tsp ginger pwd
salt to taste

Cooking Instructions:

Boil the rice ingredients together & simmer, covered, until all the water & milk is absorbed by the rice grains & the grains are cooked.

Melt the jaggery in a non-stick pot & add the coconut milk to it. Bring in to a boil & add the remaining ingredients. Simmer for a few minutes.

Pour the curry/sauce over the rice & serve warm with some steamed banana or any South-Indian side.
