Gaajar ka Halwa (Carrot Halwa)

Made this today after ages! I don’t make desserts too often but today, the onset of a long weekend, I just felt like spoiling myself a bit & It was quick, thanks to my new food processor that grated the carrots in seconds!


PrepTime 2mins – Serves 4 – CookTime 10mins



4 cups grated carrots
1 tin sweetened condensed milk (or 1 glass milk & 8tbsp sugar)
1 cup raisins, chopped cashewnuts, almonds &/or pistachios
1-2 tbsp ghee/ clarified butter
2 tbsp butter
1 tbsp cardamom pwd
1 tbsp rose-water
2 tbsp chopped nuts for garnish
1 sheet of warak (thin edible silver sheets) as decoration – Optional.

Cooking Instructions:

In a non-stick sauce-pan, fry the nuts in butter for a few seconds & take out. In the same pan, heat ghee & fry the carrot, raisins & cardamom for 5 minutes, stirring occassionally to cook evenly. Add the sweetened condensed milk until its as sweet as you like, cover & simmer for 5 minutes. Mix the rose water & fried nuts in. Stir well & garnish with the warak sheet & chopped nuts.
