Baingan Bharta

I had some brinjals in my fridge & wanted to make something special with it – not the usual chopped veg cooked in tomatoes or even with dried shrimp {yeah, u shd try that too!!} so I decided to make traditional North-Indian ‘bharta’ & OH-MAN, was it SUPER-licious!

PrepTime 10mins – Serves 4 – CookTime 20mins


1 large eggplant or 4 medium brinjals
2 tbsp vegetable oil
1 tsp cumin seeds
1 medium onion, finely sliced
1 tbsp ginger-garlic paste
1 tbsp curry powder
1 tomato, diced
1/2 cup plain yogurt
1 green chili – chopped
salt to taste
1/4 bunch cilantro, finely chopped

Cooking Instructions:

- Preheat the oven to 450 degrees F (230 degrees C) & bake eggplants on a baking sheet for 20-30 mins, until tender. Cool, peel & chop. (OR) Roast the brinjals in the gas flame until tender – then cool & mash.
- Heat oil in a saucepan & fry onions & cumin well, till onions are tender.
- Add the ginger garlic paste, curry powder, and tomatoes – cook for 1 minute.
- Add the beaten yogurt, eggplant/ brinjals and chilies.
- Season with salt & pepper.
- Add 1/4 cup water & cover-cook for 10 mins over high heat.
- Remove cover, & simmer for 5 minutes.
- Garnish with cilantro/coriander & serve with piping hot rotis.
