Yam-Cabbage Sabzi

I had some yams at home but was bored of just boiling them.. I contemplated making a gaajar-halwa-esque dessert with it.. maybe baking & stuffing it like a potato.. or creaming it for a pie.. souped perhaps.. & then I married it with a cabbage, calling for attention from the fridge – Good call indeed..

PrepTime 5mins Serves 4 CookTime 10mins

1 small cabbage – finely chopped
1-2 yams – peeled & cubed
1 medium tomato – diced
1 medium onion – chopped
1 slit green chili
1/2 tsp cumin seeds
1/2 tsp turmeric pwd
1/2 tsp red chili pwd
1/4 tsp mango pwd

1/4 tsp pepper pwd

1″ cinnamon stick
salt to taste
1 tbsp olive oil

Cooking Instructions:

Heat oil in a pressure cooker or any vessel & fry onions to pink.
Add the jeera/cumin, chilli & cinnamon – fry for 1 min.
Add the pwd spices & fry well – add very little water if reqd to avoid burning at the base.
Add the tomatoes & cook till mildly soft.
Add the cabbage & yam & stir fry for 2 whole minutes.
Add salt to taste & 1/4 cup water.
Pressure cook for 1 whistle or cook till the yam is soft & done.
Serve with rotis or as part of a ‘thali’.
