Beef & Carrot stew

On one of my very busy days, I just didn’t feel like making a full-on curry, so I decided to pressure cook my key ingredients – beef & carrots, along with some basic spices, to make a quick stew. Try this if you’re in a hurry – with chicken, mutton or plain vegs.
 
PrepTime 5mins – Serves 4 – CookTime 30-40mins.

 

 

Ingredients:
1lb beef pieces – medium pieces
1 medium onion – chopped
1 cup carrots – medium pieces
1/2 cup chopped tomatoes
2 dried red chilies
2-3 bay leaves
1″ cinnamon stick
1/2 tsp peppercorns
1/2 tsp cumin pwd
1 cube chicken/beef stock
1/4 tsp turmeric pwd
2 tbsp any curry pwd of your choice
3-4 cloved garlic – crushed
2 tbsp vinegar
3 tbsp olive oil
1 cup water


Cooking Instructions
:

Heat the oil in a pressure cooker & fry the onions to pink.
Add the whole spices – red chilies, bay leaves, cinnamon, garlic & peppercorns. Fry well.
Add the spice powders & stock cube and fry well. Add 1-2 tbsp water to prevent it from burning at the base.
Add the tomatoes & cook for 1 minute.
Add the beef pieces & cook on high flame, tossing around, for 2-3 minutes till evenly browned.
Add vinegar & salt to taste, along with the water and pressure cook – 1 whistle on high flame & simmer for 30 mins.
When the steam escapes, open & add the carrots. Pressure cook for another 10 mins.
Serve with bread, croutons, bread sticks or soup crackers. (maybe even rice).


Variations: You can add potato cubes with the carrots & in the end, you can add peas & simmer until peas are soft, not mushy.
