Meatballs & Mushroom stew

I recently made this for some friends & they was blown away by its taste – I am STILL blown away by the sheer ease with which I made it! Here’s yet another quick, simple & delicious recipe for all you meat lovers.




PrepTime 10mins – Serves 5 – CookTime 20mins

1lb or 1/2kg ground meat – turkey, beef, chicken or soy.
2 bellpeppers – red & green
1 green chili
2 medium-size onions
a handful of coriander leaves
a cube of chicken/beef stock
1/2 tsp cumin pwd
1/2 tsp pepper pwd
2 cups mushrooms – boiled in salted water.
2 tbsp olive oil
1″ cinnampon stick
2-3 bayleaves
4-5 garlic cloves – crushed
2-3 cloves

Cooking Instructions:

Grind the bell-peppers, 1 onion, coriander & green chili to a coarse mixture.
Add this mixture along with the cumin & pepper pwds, to the mince and mix well.
Heat oil in a cooker/ thick bottom sauce pan.
Add the onions & cook on medium heat to a light brown.
Add the whole spices, garlic & stock cube, mix well & cook for a minute.
Add 3-4 cups water, bring to a boil & then turn off the heat.
Make golf-ball size meatballs of the mince mixture & place them in the cooker/vessel, starting from an outer edge & working your way in concentric circles, to the centre.
Cover & cook for 1 whistle on high heat & simmer for 8 mins (about 20 minutes in a covered saucepan).
Drain the mushrooms & add them to the stew.
Simmer until the meat is well done & the mushrooms have absorbed in some stew flavor (abt 5-6 mins).
