Chicken Cutlets

OK, so I’ve made turkey kebabs, minced-beef cutlets, fish cutlets – Goan & Keralite style, .. what’s left? Ofcourse, Chicken Cutlets! You could easily make these in 20 mins flat, I promise.. A treat for the whole family & all your friends!


PrepTime 10mins – Serves 8 – CookTime 10mins.


2 cans of chicken flakes or 1kg chicken mince
2 green chilis
1 medium onion – cubed
1 egg – white separated
1 cup bread crumbs
1/2 tsp pepper pwd
1/4 cup cumin pwd
1/2 tsp garlic pwd/ paste
1 tbsp vinegar
salt to taste
olive oil to shallow-fry

Cooking Instructions:

Toss all the ingredients, except the oil, egg & b’crumbs, into the mixer & grind them together.
In a large bowl, pour out the chicken mixture & add the white of the egg – mix well.
Shape into 8 cutlets, pressing firmly in your palm. Add some b’crumbs or more beaten egg, as required, to ensure it binds together well.
Coat with beaten egg-yolk followed by b’crumbs & set aside to rest.
Heat oil in a frying pan & shallow fry the cutlets on both side to a nice golden-brown.
Serve with ketchup, sauce or any chutney of your choice, or use them to make burgers.
