Baby-squash stir-fry

I found these cute lil’ round baby squash at a local grocery store the other day & in all of just 10 mins whipped this quick stir-fry together – nothing special – just a quick & healthy meal for a slow lazy night.


PrepTime 5mins – Serves 2 – CookTime 10mins

8 baby squashes
1 cup chopped/ frozen mixed vegs – carrots, peas, corn kernels, etc.
1 cup chopped red & green bell-peppers
1 smallĀ  onion – chopped
1 chopped green chili
pepper to taste
1 small cube veg stock (or salt to taste)
1/2 tsp garlic pwd
1 tbsp orange rind
1 tbsp lime juice
3 tbsp olive oil

Cooking Instructions:

Heat oil in a pan & fry onions to light brown.
Add the stock cube & garlic powders. Fry well.
Chop the squash to 1″ pieces & toss them in. Stir around & fry for a minute.
Add the other veggies & cook on high flame, tossing & stirring around with a wooden spatula, for 2 mins.
Top off with pepper, zesty orange rind & lime juice when the veggies are crisp & cooked.
