Brinjal-Banana Paav Bhaaji

Try this novel recipe for a unique twist to one of India’s national street-side food or snack – Paav Bhaaji. I’ve made it with brinjals (eggplant) & bananas for an exciting spicy-sweet hybrid mix of baingan bharta & paav bhaaji :)

 

 

PrepTime 10mins – Serves 5 – CookTime 10mins

 

 

 

Ingredients:
5 brinjals (eggplant)
1 semi-ripe banana – chopped
1 small onion -chopped
1 yellow/red bell pepper – chopped
1 green bell pepper – chopped
1 green chili – chopped
1/4 tsp chili pwd (or more, as per your taste)
1/4 tsp turmeric pwd
1/4 tsp jeera/ cumin seeds
2 cloves of garlic – crushed
1 tbsp chaat masala or 1/2 tbsp mango pwd
juice of 1 lemon
salt to taste
1/4 tsp orange-red food color (optional)
2-3 tbsp oil
Cooking Instructions:
1. Roast the brinjals on an open flame until the skin is evenly charred (like you would for baingan bharta).
2. Heat the oil & fry the onions to light brown.
3. Add the jeera, garlic & green chilies – fry well.
4. Add the powder spices & fry well until the oil separates.
5. Add the chopped veggies and banana & stir-fry for 1 minute.
6. Skin the brinjals & finely chop the brinjal roughly – add it to the spices.
7. Cover & cook for 5 mins & then mash the mixture (like you would for paav bhaji)
8. Add the food color & lemon juice & stir well.
9. Butter some paavs (buns) , light toast them & serve with your warm ‘brinjal-banana’ paav-bhaaji!
