Yam & Okra Pepper-fry

This is something I like to make to surprise people – it appears to be extravagent & rich, but in fact, its simple, uses 2 basic key ingredients – yam & okra, and has a luring aroma with strong pepper notes. Fit for a Maharaja, I say!




PrepTime 10mins – Serves 4 – CookTime 15mins


1/2 kg chopped okra (I take off the ends, cut them once lengthwise & then into 1/2″ slices widthwise)
2 medium yams – peeled & diced to 1/2″ pieces
1 medium onion – chopped
2 tbsp olive oil
1″ stick cinnamon
2-3 cardamoms
1-2 dry red chilies
3 springs curry leaves
1 tsp pepper pwd
1 tsp cumin pwd
2 tbsp corriander pwd
1/2 tsp mango pwd
1/2 tsp garlic pwd or 3 cloves garlic – minced
1/2 tsp garam masala
peppercorns in a pepper-mill.
salt to taste

Cooking Instructions:

1. Dry-roast the okra until you can’t see any slime. Set aside.
2. In the same pan, heat the oil & fry onions to light brown.
3. Add the whole spices – red chilies, cardamom & cinnamon, and some fresh ground pepper & fry well.
4. Add the powder spices & fry well (add little water if its burning at the bottom).
5. Add the yams & stir cook for 30 secs, add 1/4 cup water, cover and cook on medium-flame till done (not too soft).
6. Open-cook on medium heat to dry it out completely.
7. Add the okra, curry leaves & top off with some freshly crushed pappercorns.
8. Serve with rotis/ naans or some daal-rice.
