Shrimp Chilli-fry

When you don’t wanna have shrimps in a curry, rice, salad, bbq or fried variety, you wonder – IS there another way?!?! I got an idea – I’ve had Goan beef chili-fry before, so I adopted its base for my shrimps & voila!
 

 

 

PrepTime 10mins – Serves 5 – CookTime 15mins

 


Ingredients:
1 cup deveined & cleaned shrimps cut in half.
For the marination:
- 1/4 tsp turmeric pwd
- 1/4 tsp cumin pwd
- 1/4 tsp pepper pwd
- 1/4 tsp cayenne/red-chili pwd
- salt to taste
- juice of 1 lime
1 medium onion – chopped
2 medium tomatoes – chopped
2-3 green chilies
1/2 tsp garlic-ginger pwd
2 tbsp coriander pwd
1 tbsp garam masala
1/2 bunch coriander leaves – chopped
1/2 cup peas
3 tbsp olive oil
salt to taste


Cooking Instructions
:

1. Marinade the shrimps in the turmeric, red-chili, cumin & pepper pwds, salt & lime juice – for min 10mins.
2. Meanwhile, heat the oil & fry the onions to light brown.
3. Add the coriander & garam masala pwds & fry well.
4. Add the garlic-ginger paste & cook for 1 min.
5. Add the green chilies & tomatoes and simmer till the tomatoes soften.
6. Toss in the shrimps & cook on medium heat, tossing around to cook evenly for 2-3 minutes (until the shrimp pieces go from pink & translucent to white & opaque.
7. Top off with salt, lime juice, peas & coriander leaves – stir & cook for another minute or until the shrimp is cooked. Never over-ccok shrimp or it will get rubbery & hard.
