Fiona’s Chilli-Chicken

This is one of the best dishes Fiona makes – its simple to make, has an excitingly delicious flavor & an alluring aroma.. People, u do NOT wanna skip this one!

 

 

 

 

PrepTime 10mins – Serves 3 – CookTime 3mins.

 

 

Ingredients:

Chicken Thighs- 1.5 lb
Green Chillies Slit1-4-5
Cumin Seeds-1/2 tspn
1 Egg
Chilli Powder-1/2 tspn
Curry Leaves-1 strand
Salt to taste
Cumin Powder- 1/2 tspn
Ajinomoto- 1 tspn
Chilli Garlic Paste- 2tspns
Corn Flour- 2tspns
Chopped Ginger- 1/2 tspn
Chopped Garlic-1 tbspn
Pepper Powder- 1/2 + 1/2 tspn
Ginger Garlic Paste- 1/2 + 1/2 tspn


Cooking Instructions
:

1. Add 1tsp salt, ½ tsp Ginger Garlic Paste, 2 tsp Corn flour, 1 tsp ajinomoto, ½ tsp pepper powder & 1 egg to the chicken.
2. Deep fry the chicken in heated oil & set aside to drain on paper towels.
3. For the sauce, heat some oil in a flat pan & fry ½ tspn of cumin seeds.
4. When this splutters, add ½ tsp of chopped ginger, 1 tbsp of chopped garlic, 3 sliced green chillies, 1 strand of chopped curry leaves, ½ tsp of ginger garlic paste, ½ tsp of pepper powder, ½ tspn of cumin powder, salt ( not too much because there is already salt in the fried chicken and 2tsp of chilli garlic paste. If it requires some more spice, add ½ tsp of chilli powder.
5. Add the red colour mixed in a little water.
6. Add 1 small cup of water & simmer for a bit.
7. Add the deep fried chicken
8. Taste for salt & add more, if reqd.
9. Toss the chicken and mix nicely for about 5-10 mins so that it is nicely coated.
10. Once the chicken is cooked sprinkle few drops of lime juice and your chilli chicken is ready.
