Spicy Thai Chicken Pizza

Now here’s an interesting variation to your normal pizzas – This one’s for all of you out there that LOVE spicy Thai food; I’m putting all those amazing tongue-teasing flavors into one of the world most popular dishes – a pizza!!

 

 

 

PrepTime 10mins – CookTime 30mins – Serves 4


Ingredients:
1 ready-to-bake pizza base (I use the wheat-free, yeast-free, gluten-free, dairy-free 6″ ones from Clark’s)

For the Thai pizza sauce:
3 tsp soy sauce
3 tsp rice vinegar
1/2 tsp lemongrass paste (wash & smash the leaves with little water)
3 tsp peanut butter
1/2 tsp ginger paste
1/2 tsp Thai chili sauce
1/2 tsp honey

For the Thai pizza topping:
1 cup cooked boneless chicken cut in strips
1/4 cup grated mozzarella cheese
1 small red/green chili – finely chopped
1 medium red bell-pepper – cut into long strips (or some green too)
1/2 cup pineapple pieces (optional)
1-2 green-onions – finely chopped
1 grated carrot
1/4 tsp salt
3/4 tsp paprika pwd
2 tsp toatsed sesame seeds (optional)
1/2 cup fresh Thai basil – chopped
1tbsp red-chili seeds

Cooking Instructions:
1. Bake the pizza shell in a preheated oven at 350F/175C for 10mins.
2. Meanwhile, mix the sauce ingredients together.
3. Remove the cooked pizza shell & make 6-8 cuts on it to prevent it from ballooning up.
4. Spread the sauce on it, followed by the toppings, except cheese, basil & chili seeds.
5. Sprinkle some oil over it & bake for 15-20 mins or till the crust is lightly browned.
6. Remove again & add cheese & basil . Bake until the cheese melts.
7. Top off with red-chili seeds & set aside to cool for 5mins, then cut & serve!

 

Tip: Can be made as a seafood or all-veg pizza too.
