Ridge-gourd or Touraii sabzi

In case you’re wondering what Ridge-gourd/Touraii is, I have a picture for you.. Here’s how I make it with some daal & spices; pretty easy & verrry delicious..

 

 

PrepTime 5mins – CookTime 15mins – Serves 4

 

 

Ingredients:

3 medium-length ridge-gourds (toraii in Hindi) – cubed
1/2 tsp cumin seeds
2 tbsp olive oil
1 chopped medium onion (optional)
1/4 tsp crushed garlic/ginger
1/2 cup red masoor daal
1 large tomato – cubed
1-2 chopped green chilies
2 tbsp grated coconut
1/2 tsp turmeric pwd
1/2 cup green peas (optional)
a sprig of curry leaves (optional)
salt to taste

Cooking Instructions:

1. Heat oil & fry the onions to a light pink.
2. Add the cumin seeds & chilies and cook for a minute on low heat.
3. Add the turmeric pwd, garlic/ginger paste – stir for a few seconds & add washed daal.
4. Fry well for a minute & then add the tomatoes & some salt
5. Toss in the gourd/tourai, curry leaves, curry leaves, peas, grated coconut & 2 tbsp water.
6. Mix around, cover & cook for 10 mins, tossing in between, until the gourd & daal cook well. (In a pressure cooker, you would cook on high heat for 1 whistle only; no need to simmer)
7. Serve hot with rotis or as a side to daal-rice, rajma-chawal, etc.
