French-beans & Yam

Here’s yet another simple, light, delicious & nutritious recipe for all my vegetarian friends who’ve been asking me for quick, easy & healthy veg dishes.

 

 

 

 

PrepTime 10mins – CookTime 6mins – Serves 4

 

 

Ingredients:
1lb (or 500g) fresh French beans, chopped
1 small onion – chopped
2 yams – peeled & diced
salt & pepper to taste
1 green chili – chopped
2 tbsp olive oil/ butter/ ghee
2-3 chopped garlic cloves
1/4 tsp cumin pwd

Cooking Instructions:

1. Heat the oil in a pan or cooker, fry onions till light brown & soft.
2. Toss in the spices & cook for a minute.
3. Add the veggies & stir well – Allow to fry for a bit, stir again. Repeat a few times.
4. Add 1/4 cup water, cover & cook (1 whistle on high heat) till done.
5. Serve with hot rotis or as a side with daal-rice or a thali.

I’ve had it with pita bread & hummus – Awesome!!!!!!!
