Eggs in a spinach gravy (Andaa-Saag)

Wonder if you ever thought about this – we know of certain spinach gravies like Murg-saag [chicken in spinach], Lamb-saag or Paneer-saag [cottage cheese in spinach, a.k.a. Palak Paneer], but have you thought about EGGS in spinach gravy??? I must say – its simply WOW!!




PrepTime 5mins – CookTime 20mins – Serves 4



4 hard-boiled eggs
1 large bunch of organic spinach
1 medium onion – chopped
1/2 cup chana-daal or masoor daal (optional)
1 cup cooking cream (half, if you’re using daal)
1/2 tsp jeera/cumin seeds
1/2 tsp turmeric pwd
1 tbsp garam masala
3-4 garlic cloves – crushed
a pinch of hing/ asafoetida
1 chopped green chili
2 tbsp oil
salt, pepper & sugar to taste

Cooking Instructions:
1. Heat oil & fry the onions to a light pink.
2. Add the cumin seeds, garlic & chilies and cook for a minute on low heat.
3. Add the powder spices & fry well.
4. Toss in the daal & stir well. Add little water, cover & cook for a few minutes.
5. Meanwhile, grind the spinach to a paste with little water.
6. Add the spinach to the daal & bring to a boil – then, simmer on medium flame for a few minutes.
7. Beat the cream & add while stiring constantly.
8. Taste & adjust salt, sugar & pepper to your liking.
9. Cut the boiled eggs in half & add them to the gravy.
10. Cook open on medium heat for 1 minute.
11. Serve hot with rotis or rice & papad.
