Chicken Curry Crepes

I remember a cold windy evening in London, we stumbled upon a lovely French cafe.. Looked like a postcard or painting – SO beautiful & romantic.. I had a great time there & took the taste ‘To Go’.. came home & experimented till I got it!!


PrepTime 20mins – CookTime 25mins – Serves 12




For the crepes:
3 eggs
3/4 cup flour
1/2 tsp salt
3/4 cup milk
5 tsp melted butter

For the Chicken Curry:
(Skip the chicken for a veg variety)

5 Tbsp butter
1/2 onion, diced
1/2 green/red pepper, diced or julienned
salt and pepper, to taste
1/4 cup flour
2 cups chicken stock
1/3 cup milk or heavy cream
1 Tbsp curry powder, more or less to taste
1/2 tsp cayenne pepper
1/2 tsp ginger powder (or 2 t. freshly grated ginger)
1/2 cup green peas
1 cup lightly boiled broccoli
4 cups boneless chicken - fully cooked and diced

Cooking Instructions:

For the crepes:
Mix all the ingredients together & whisk lightly to a smooth batter.
Melt a little butter on a non-stick pan/skillet on medium heat.
Add just under 1/4 cup of the batter to the skillet. Lift and tilt the skillet to cover the surface with the batter, cook until it begins to look dry (35-45secs), flip over & cook for another 30-35secs.
Continue with the remaining batter - Make about 20-25 crepes.

For the curry:
Melt the butter in a large skillet over medium heat & fry the onions & bell pepper.
Season it with salt and pepper & cook until onion is translucent.
Add the flour, stir & cook for 2mins.
Add the chicken stock & milk/cream and bring it to a boil, then simmer for 4-5mins until thick.
Add the curry, cayenne pepper and ginger powders.
Take a cup of the curry out & set aside.
Add the peas, chicken & broccoli to the curry & cook for 5mins.
Allow it to cool to room-temp.

Stuffing the crepes:
Place a crepe on a large clean, dry plate. Spoon on some curry in the center & fold or roll it up. If you roll it, place the seam side underneath.
Repeat with the rest of the crepes & curry.
Pour the reserved curry over the crepes.
Just before serving, bake at 350degs for 20mins or till the curry on top begins to bubble excitiedly!! :)
