Asparagus-Avocado soup

This may be, by far, the BEST dish I could ever make with Asparagus and its so versatile – You can have it warm or cold, dress it up with your fav toppings, add nutmeg to make it festive, etc.. SO good!

 

 

 

PrepTime 10mins – CookTime 35mins – Serves 4

 

 

 

 

Ingredients:
2 tbsp unslated butter or olive oil
1 small white onion – minced
4 garlic cloves – minced
1lb Asparagus – cleaned (thick bits removed) & finely sliced
1 pinch nutmeg pwd
3 cups water/ chicken stock
1 large ripe avocado – peeled & pitted
salt to taste
pepper/ cayenne pepper/ tobasco sauce – as per taste
1/2-1 cup beaten cream
1/2 cup chopped mushrooms (optiona)
Soup crackers &/or Avocado chips to top the soup.

Cooking Instructions:

1. In a thick bottol soup pot, sweat the onion & garlic in the butter over low heat.
2. Add the nutmeg dust, mushrooms and asparagus - Stir well & then add water/ chicken stock.
3. Bring it to a boil, then simmer for 20mins till the asparagus is tender.
4. Allow it to cool (perhaps in an ice-bath) & then puree in a blender.
5. Strain through a mesh sieve.
6. Put it back in the blender, add avocado & blend again.
7. Fold in the cream & adjust the seasoning to taste.
8. Top with Avocado chips & soup crackers.
