Lotus-stem Sabzi

Alright, I know you think this is okra & to tell you the truth, I would too.. Only, I’ve actually had this a few months ago. It was introduced to me by my MIL in India & I found these chopped stems at an Asian market here in the US, so now I make it too.

 

 

 

PrepTime 15mins – CookTime 15mins – Serves 4

Ingredients:
• 2 Medium size lotus stems, peeled & cut into 1/2 inch thick slices (or you get a frozen pack)
• 1 large finely chopped onion
• 2 ripe tomatoes – chopped
• 1″ piece ginger, chopped
• 8 Garlic flakes, crushed
• 2-3 Green chillies- chopped
• 1/2 tsp Dry mango pwd (Amchoor)
• 1/2 tsp Garam masala (All-spice)
• 2 tsp Lemon juice
• 2 tbsp Ghee or oil
• Salt as required
• 1 big cardamom
• 1″ stick of cinnamon
• 1/2 tsp Cumin seed
• 2-3 cloves
• 2 Dry red chillies
• 1/2 tsp Pepper corns
• 1 tsp Coriander seeds

 

Cooking Instructions:

1. Heat 4-5 cups water in a skillet and add 2 tsp salt & 2 tsp lemon juice - bring it to a boil.
2. Add the stems, cover & simmer for 15mins – Drain & set aside to cool.
3. In a pan, heat the ghee & fry the cardamom, cinnamon, cloves & cumin.
4. Add the onions & cook on medium heat to light brown & soft.
5. Add the ginger, chillies, crushed garlic, crushed coriander seeds & crushed peppercorn – fry well for a minute.
6. Add the tomatoes, mango pwd, salt & all-spice powder. Fry well.
7. Add 1/2 cup water, bring to a boil, add the stems & cook for 2-3 minutes on high heat.
8. Cover & simmer for 8 mins.
9. Dry out the extra water & serve hot with rotis or a side to your meal.
