Make Biryani Masala

A fan from Dubai recently asked me a question that I’m sure, at some point in your lives, you all may have thought about too – How to make Biryani Masala? Well, here’s my take..
There are 2 types of Biryani Masalas I make – 1 basic & 1 a bit extravagant, and then, there are tips & variations to these to enhance the flavors in my biryani.

Basic Biryani Masala Ingredients:

1. Cloves – 10
2. Green Cardamom -  4
3. Cinnamon stick – 4 pieces of 1” inch length each
4. Nutmeg – 1/2 tsp grated
5. Mace – 1
6. Star Anise – 2
7. Fennel seeds – 2 tsp
8. Cumin seeds – 1 tsp
9. Bay Leaves – 4

 

Rich Biryani Masala Ingredients:

ALL THE ABOVE 9 INGREDIENTS PLUS:
10. Coriander seeds – 2 tbsp
11. Turmeric – 1/2 tsp
12. Dried Red Chilly – 4-6 dep on size & spice factor
13. Black Pepper corns – 6
14. Black Cumin (Shah Jeera) – 1/2 tsp
15. Black Cardamom – 1
16. Poppy Seeds – 2 tbsp
17. Aniseed (Saumph) – 1/2 tsp
18. Caraway Seeds (Shia Jeera ) – 1/4 tsp
19. Dried Fenugreek Leaves – 2-3 tbsp
20. Saffron – a pinch


Common Method:

- Dry-roast these ingredients from larger ones to smaller ones. (Dry-roasting helps to enhance the flavors & stretch the shelf-life of the masala).
- Grind to a powder and store in an air-tight container.

Variations & tips:

- If you’re making the masala just before making the biryani as opposed to storing it earlier, dry roast slices of 1 onion too & then add to the grinder with little water – You will get a pasty masala (not powder) but its just as good.
-  You can even use 2 tbsp vinegar while grinding, apart from water, for an extra tangy taste.
- Add a few drops of rose water to the masala when it has combined with the veggies/meats &/or rice for a lovely aroma.
- I would add roasted cashews & almonds too, for that extra-rich taste.

    It sounds good, but you have not mentioned, how much masala powder should be added to prepare one kilo briyani rice.Please let me know, The above masala is for how much qantity briyani.

      My recipe is for a 1/2kg jar/box of the masala, ready to be used in your biryani as per your taste. Now, 1kg of raw rice = 5 cups of raw rice. I would use the full recipe for 1/2 kg raw rice. You would double that for 1kg raw rice. Lemeno how your biryani turns out.
