Found this easy take on this recipe – a quick BAKED warm version.. yummm!!

Hey guys, try this quick different version of a banana pudding – its BAKED!For 2 people, get 2 individual baking dishes ready- round, oval or heart shaped. For the base/crust, grind 6-8 vanilla wafer biscuits, 1/2 tsp sugar, a pinch of salt & 3tbsp butter to a crumbly mix & press this equally into the baking dishes, patting down to cover the base evenly & firmly. For the filling, mix together 1 chopped ripe banana, a handful of chopped nuts (cashews, peanuts, walnuts), 2 tbsp brown sugar, 2 tbsp mini-choco-chips and spoon it equally into each bowl. In another bowl mix 2 tbsp lemon zest/rind, 2 egg yolks, 1 tsp sugar, 1/2 cup cream & few drops vanilla, whisk it all up. Pour this into the bowls & bake at 350 deg for 30-35 mins. I’m gonna try this over the weekend… Basic ingds, simple n quick!!
